    A busy, productive and enjoyable day. We made predominantly vegan food – falafel, cauliflower and almond beignets, butternut squash risotto and a sweet potato and spinach curry. Lee cooked us cauliflower steaks for lunch, with a variety of tasty accompaniments including some of his yummy home-pickled mushrooms and one of the beignets we had made earlier. We also had a go at using the liquid from the chick peas – aqua faba – to make a successful garlic mayonnaise, but the experiments with meringue and coconut cream were less successful. We took the results of our day’s work home, and the recipies should follow via email. I am a fairly experienced and quite adventurous vegetarian home-cook so, for me, it was more of a refresher than a reboot of my repertoire. It would have been helpful to have a clear preview of the day’s contents on the website – i was anticipating a ‘journey through superfoods, pickling, pétrification and upside down cooking’ to really update and upgrade my cooking.
